Re Panettone is the most popular event devoted to this typical sweet bread loaf originally from Milan. Conceived and organized by Stanislao Porzio, the first edition of the event was held at Teatro Litta in Milan the last weekend of November 2008.
Ever since then, it takes place every year in late November in Milan, but also in other cities, to spread everywhere the culture of panettone.
The goal of the event is the exhibition of fine artisan panettone, to promote quality. Year after year more content is added to the original, turning the event into a more interesting one.
Panettone, a totally unique product, was born like many other celebration cakes, enriched breads to enjoy on Christmas Day, to mark the holiness of the celebration. It is characteristic because of the double or triple leavening, made with yeast.
The magic of rising dough, that regenerates basically forever, if treated with care, is the basis to get a distinctive inner core. Beyond the intense yellow colour coming from the butter and egg yolks, beyond the orange, green and brown spots of candied fruit and raisin, it’s mainly the large irregular holes that distinguish it from other preparations.
In fact, not all of them may be called “panettone”: the cake must meet certain requirements regarding the recipe and ingredients and there are even three regulations concerning them, including a minister’s decree and a product specification!
THE 2016 EDITION
From 26 to 27 November in Milan and the following weekend, 3 and 4 December, in Naples: the 2016 edition of Re Panettone doubles up again! For the second year in a row Re Panettone, the first and most influential festival dedicated to panettone, created by Stanislao Porzio, will count on the most important personalities of Italian pastry in two prestigious locations, the Spazio MegaWatt in Milan and the Salone degli Specchi of Grand Hotel Parker’s in Naples.
The format of the event, hosted in Milan since its very first edition in 2008 and since last year also in Naples, foresees exhibitions, tastings, meetings with pastry chefs, thematic insights and sensory labs. It is a trade show that gives voice annually to the big names of the national pastry, famous pastry makers and at the same time to new talented artisans, all carefully picked according to a strict selection.
THE PURPOSE OF THE EVENT
First of all, to let the widest possible audience know the level of excellence the cake can reach, very well-known in its industrial version, but never enough in the artisan or semi-artisan versions; to reiterate the Milanese origins of panettone, a cake that has conquered not only Italy but the world, becoming a symbol of Christmas and a cultural phenomenon that goes beyond the sphere of food and finally to spread the culture of panettone as the highest expression of Milanese cuisine all over the world.
