HISTORY

The ritual of granita is, today, the Sicilians lived as a moment of communion and social relationships, a tradition of taste that has its roots in the Arab domination, then evolved, especially in the eastern side of the island, in a refined and inimitable confectionery product you buy as they go along the coast and in the various provinces, certain variations aromatic. Since the Middle Ages, in Sicily there was the profession of the “nivaroli”, that is, those men who were responsible for collecting winter snow on Etna, the Peloritani, Iblei or Nebrodi, and throughout the year, took care to preserve the Snow in “neviere”, preserving her from the summer heat, and then, as in the case of “nivaroli Etna”, carry it up by the sea during the months of greatest drought. The slush was prepared in different flavors, with coffee and lemons, mulberries and almonds in the area.

Granita crafts, particularly refreshing and useful to cool off in the hot Sicilian summer, is not only an art for those who prepare, but it is mostly an inevitable rite for those who savor and suggests the consumer to enjoy it and relax. The ritual of the Sicilian granita with its slow, the quality and variety of tastes, reflects the culture and history of Sicily stratified, and still lived by the Sicilians as a moment of communion and social relationships, a tradition of taste that has its roots in the Arab domination, then evolved, especially in the eastern side of the island, in a refined and inimitable confectionery product they buy, as they go along the coast and in the various provinces, certain variations aromatic.

LA NIVARATA

Sicily in the popular imagination is for sun, sea and … granita! And it is precisely to promote this famous typical product along with wonders, natural and otherwise, of this wonderful island that comes the festival “Nivarata – Acireale and the ritual of the Sicilian granita”, now in its fourth edition. On days 29, 30 and 31 May 2015, the event, asserted itself as the official event dedicated to the Sicilian Granita, will attract tourists, professionals and experts in the food sector and will offer an innovative path of taste to discover also the architecture, history and culture of the island. Tourists will be involved in the preparation and will taste the typical Sicilian granita through contests, tastings, conferences and exhibitions, but there will be side events aimed at the promotion of the territory: the guided tour of Mount Etna starting from Acireale to artistic and cultural events and the agri-food sector. For professionals, the festival becomes a place of informal exchange of ideas and techniques both ancient and modern, always with the use of raw materials from the surrounding area. With more than 110,000 admissions last year and 40,000 granite distributed in booths for the festival, “Nivarata” also creates a stronger economy, the development of new businesses and the dissemination of new skills and professionalism.
