GNOCCHI STUFFED WITH PESTO WITH SQUID SAUCE


INGREDIENTS

1 kg boiled potatoes
300 gr flour
200 gr cow milk ricotta cheese
50 gr pesto
500 gr squids
200 gr red tomatoes
Salt and pepper as needed
Parsley as needed
30 gr scallion
2 eggs
50 gr Verdicchio wine
Garlic
50 gr extra vergin olive oil

PREPARATION

Prepare a mixture using potatoes, flour and eggs; roll aou with a rolling pin and cut into round piece with a diameter of 6 cm.
Pass to the mixer the ricotta and the pesto, put to the center of every disk the gotten result and fold in two.
Cut the squids into rings, sauté them with oil, garlic and baste with white wine, let evaporate; add parsley, tomatoes, and lastly, the chopped scallion. Salt and pepper to taste.
Cokk the gnocchi in water and sauté them with the sauce thus prepared.
