Venice is ready to host “La Cucina del senza” (Cooking without) with the 2016 edition of GUSTO IN SCENA from February 28 to 29 at the Scuola Grande di San Giovanni Battista: not a dietetic yet a lifestyle choice that focuses on food with a new and different attitude.
WELLNESS STARTS AT YOUR TABLE
Gusto in Scena will be the stage for the selection of the finest food and wine companies, starred chefs and pastry chefs. The different sections of the event that will host the participants are called: Il Congresso di Alta Cucina, I Magnifici Vini, Seduzioni di Gola e Fuori di Gusto.
Chefs will measure against La Cucina del senza, a real lifestyle that finds its maximum expression in cooking to rediscover wellness starting from the table thanks to the elimination of salt, sugar and fats from food, but enhancing its taste and natural properties. The new La Cucina del senza, designed by Marcello Coronini, finds the approval and support of important personalities of the scientific and academic world who agree with the Comitato Scientifico della Cucina del Senza (La Cucina del Senza scientific committee). The new philosophy of food and the benefits brought to the daily diet have made Gusto in Scena gain the Ministry of Health’s support for three consecutive years.
This food and wine event reaches this year its eight edition; it has been offering “four simultaneous events” to industry operators and gourmets since 2008.
The conference Alta Cucina Gusto in Scena sees the most important Italian starred chefs taking part in 16 masterclasses and showing the audience how to prepare two courses according to La Cucina del senza principles: the first course will have no added fats, while the second will be cooked without salt. The pastry chefs will propose desserts without added sugar and even the best pizza makers will offer their pizza without salt, added fats and gluten.
A tasting called I Magnifici Vini (Magnificent wines) will feature more than two hundred wines, selected according to qualitative and historical-cultural criteria, and divided into four categories based on the production environment, characteristics, flavours and fragrances: sea, mountain, plain and hill wines.
Do not miss the tasting of culinary excellences made by the best Italian and international production, called Seduzioni di Gola (Mouth-watering seductions). Fuori di Gusto is the event that involves the best restaurants and major hotels of Venice for the entire weekend. They will create an original menu “Gusto in Scena” dedicated to La Cucina del Senza that proposes a new interpretation of traditional local dishes and suggests new culinary ideas. Each menu will have a special price and will be served with wines produced by the wineries attending the event.
