The puff-pastry baskets with figs, ham and caprino cheese & celery cream are appetizers or finger food, as people like to call them now, very simple and fairly quick to prepare, perfect for enriching a delicious aperitif, a buffet or as appetizer for Sunday lunch!
Here is how I made them!
DIFFICULTY LEVEL: easy
PREPARATION TIME: 40 minutes
COOKING TIME: 10 minutes for puff-pastry baskets
SERVING 18 BASKETS
1 roll of rectangular puff pastry
180 g of caprino from cow’s milk
1 celery stalk
5 ripe figs
1 hg of Parma ham
Salt to taste
Pepper as needed
Preheat the oven to 180 °C. Cut with a pastry cutter into circles and use a muffin cases lightly buttered to shape the dough, pricking all over with a fork.
Bake for about 10 minutes until golden and repeat this procedure also for the scraps dough, kneaded quickly and flatten using a rolling pin.
Meanwhile, prepare the caprino & celery cream putting in a mixer the cheese and a celery stalk without the filaments and cut into chunks, adding a pinch of salt and a generous pinch of pepper.
Blend until you get a soft and smooth cream.
Wash and cut the figs into four parts, without peeling them.
Finally, cut the ham into strips about a couple of centimeters wide … at this point you can continue as you like: I made little roses rolling initially narrow strips and then, holding the roses from the base, making them wider, or you can fold them several times, as in an “s”, not squeezing them!
Assemble filling each of them with the caprino and celery cream, using a spoon and top with a quarter of fig and prosciutto.
The puff-pastry baskets with ham and figs are ready to eat in one bite!
