SWEET AND SOUR FRESH TUNA, A MITH OF FAVIGNANA’S COOKERY

The flavour of this dish comes mainly from wine and vinegar. They should be of excellent quality!
Onions are the essential part: they have to be generous and soft, and absorb all the cooking aromas.

SERVES 4

DIFFUCULTY easy

PREPARATION TIME 10 minutes

COOKING TIME about 20 minutes

INGREDIENTS

• 800g fresh tuna fish
• Flour to taste
• Extra virgin olive oil
• Salt to taste
• 3 big size yellow onions
• 1 dl white vinegar
• 1 tbsp sugar

METHOD

Cut the tuna fish steak into slices not too thick, coat them with flour and fry generously with oil.
Set aside on blotting paper, add salt and keep them warm.
Cut the onions and fry them in the same oil used previously for the tuna fish.
Once onions are caramelized, move them into another pan and soften them up with vinegar and sugar diluted in it.
Put fried tuna slices into this mixture and season for a couple of minutes.
Serve cold.
