La Buttiga craft brewery was born in Piacenza in September 2011 under the auspices of the slogan “Drink like a bull”. In a few years the founders have already changed location (they are currently located in an old sixteenth century court) and increased the production capacity several times, expanding nationwide their distribution network and con-stantly increasing the number of labels offered. Nowadays the main reference is the Anglo-American brewing tradition, including some digressions in Belgian land, and all the beers produced are top-fermented, except for a Pils.
Psycho stands out within the range of La Buttiga beers. It is an Imperial IPA ranked third in Beer of the year 2014, cat-egory 9 (light and amber, high fermentation, high alcohol content, hoppy, Anglo-American inspired), and it was de-clared Daily Beer by the Slow Food Italian Beer Guide 2015 (Guida alle birre d’Italia 2015).
A good imperial IPA must have a strong flavour and significant greater aromas of hops, an intense bitter taste, persis-tent and clean, yet still maintain a good drinkability. We can identify all these features in Psycho, golden brown tending to orange in a glass, with medium-grained beige foam, persistent. Intense American hops and oceanic aromas (grape-fruit and mango) with balsamic and herbal notes in a minor scale, which overlook a malty base tending to caramel. An alcohol scent is perceptible to the nose, but it is a well-integrated presence and kept under control. The sweet initial taste is brief but clear, with an aftertaste of slightly roasted malt (bread and cracker), but the bitterness persists long on the palate. The aftertaste has resinous and balsamic hints, and of course citrus. Drinkability – very important feature in this style – is preserved, thanks to a medium carbonation and body. Psycho is certainly a beer suitable for lovers of abun-dant hopping and extreme bitterness (99.8 IBU declared), made properly and therefore very enjoyable. An Imperial IPA ideal not only to sip but to drink.
